Get ready for another amazingly delicious and healthy cookie recipe. Infused with Orange and Cinnamon Vitality essential oils, strawberries, chocolate, and einkorn flour, it will be hard to have just one!

Recipe: Strawberry chocolate einkorn cookies
Yield: 12-14 cookies

Ingredients:
•1 cup (100 g) instant oats
•¾ cup (90 g) Gary’s True Grit Einkorn Flour
•1½ teaspoons baking powder
•⅛ teaspoons salt
•2 tablespoons (28 g) coconut oil, melted (wait until it cools)
•1 large egg, room temperature
•1 teaspoon vanilla extract
•1/cup raw honey or organic maple
•5 drops Orange Vitality essential oil
•2 drops Cinnamon Vitality essential oil
•½ cup (80 g) finely diced fresh strawberries
•3 tablespoons dark chocolate chips, divided

Directions:
•In a medium bowl, whisk together the oats, flour, baking powder, and salt.
•In a separate bowl, whisk together the coconut oil, egg, vanilla, honey, and Cinnamon and Orange Vitality oils until thoroughly incorporated.
•Add the flour mixture to the liquid, stirring just until combined.
•Fold in the strawberries and 2 tablespoons of the chocolate chips.
•Chill the dough for at least 30 minutes (cover with plastic wrap, ensuring it touches the entire surface of the cookie dough).
•Preheat your oven to 325°F and line a baking sheet with parchment paper.
•Drop the cookie dough into rounded scoops onto the baking sheet. (If chilled longer than 1.5 hours, flatten slightly.)
•Gently press the leftover chocolate chips into the tops of the cookies.
•Bake at 325°F for 11-14 minutes.
•Cool on the baking sheet for at least 15 minutes before turning out onto a wire rack.

*Notes: Make sure to measure both the oats and flour correctly, using the spoon-and-level method: spoon the flour/oats in the measuring cup until it is overflowing. Then take the back of a table knife and level the flour/oats.
